Below I'm offering a more healthy, more flexible alternative. These are great on salads as well as perfect for snacking on.
Recipe Friday: Crunchy Chickpeas
Below is a modification of the recipe I first used from weightwatchers.com. That said you should feel free to get creative with your spices. Cumin is a great addition, as is smoked paprika.
2-3 spray(s) olive oil cooking spray
2 cup(s) canned chickpeas, rinsed and drained
1/4 tsp garlic powder
1/8 tsp red pepper flakes
sea salt and pepper to taste
Preheat oven to 450ºF. Lightly coat a rimmed baking sheet with cooking spray (it's ok to foil line the pan too).
Spread chickpeas on baking sheet and sprinkle with spices; toss to coat.
Roast in oven, shaking pan about every 15 minutes, until browned and crunchy, about 35 minutes. Cool before serving.
