Recipe Friday: Grilled Balsamic Eggplant

I think eggplant is delightful, but some preparations can be a bit too labor intensive for my taste. I actually learned this method from my dad, and it's become a staple at NH meals.
No joke, this recipe could not be more easy.
Recipe Friday: Grilled Balsamic Eggplant
Choose an eggplant with a nice shiny, and dark purple skin. It should seem heavy for it's size. Place the eggplant on it's side and cut into 1/2 inch thick rounds.Take a large zip-top freezer bag (one big enough to hold all the eggplant pieces) and add a few glugs of olive oil, a few glugs of balsamic vinegar, a pinch or two of kosher salt, and a few grinds of black pepper. Add eggplant to bag, close bag, and shake!

It's best to let this marinate for a few hours in the fridge, but one hour is fine if that's all you have.
Place marinated eggplant rounds on your grill and cook until they are tender and have sexy grill marks. Yum!
