Recipe Friday: Oven Frittata

A frittata is basically an Italian omelette. Traditionally it's started on the stove top and finished in the oven. For this recipe I did the whole thing in the oven, because frankly, it was easier. I made this frittata on a Sunday afternoon and then ate it all week for lunch. What's great about this recipe is that again, it's just a framework, you can put whatever you want in it, same as you would any omelette. I made mine South Beach friendly.
Recipe Friday: Oven Frittata
Ingredients:
9 eggs (Because I used a 9x9 silicon baking dish)
1 bag frozen spinach, defrosted and with all water squeezed (this is super important, watery spinach will water down your frittata and make it not set up properly)
mushrooms
Swiss cheese
Pre-heat oven to 350.
Beat all eggs as if you were making scrambled eggs, and pour into baking dish that has been brushed with oil or coated with non-stick spray. Add your extras, for me this was the spinach, mushrooms and Swiss cheese.
Bake at 350 for aprox. 30 minutes or until done (firm to the touch).
