Recipe Friday: Baby Coconut

So this Friday is not a recipe, as much as it is talking about a new fruit we tried.  Fresh coconut is nothing new to me.  I quite like it, but it is very labor intensive.  So, on a recent trip to the local Asian market (Super 88), the Goog and I decided to try baby coconut...which when you see it, doesn't look like a coconut at all!

Recipe Friday:  Baby Coconut

Here is the baby coconut when you first buy it.

It's covered in a thick husk and you have to cat away at it to get to the nut inside (that is what you more traditionally think of as a coconut).  


Once you get to the nut inside, since it's a young coconut, the shell is not as hard or thick as an older one.  You can just use the base of a knife to crack the shell...make note, there is a lot of delicious coconut water inside, so there may be some splashing.

Don't just dump out this water....it's delicious and good for you!  Use a straw instead ans slurp away.

There is some coconut meat inside baby coconuts, but it's not a lot.  What is there however is soft...almost gelatin like, and very subtle tasting.  I thought it was quite good, and wished there was more of it.

Baby coconuts are slight more pricey than more mature coconuts, but still only just over 2 dollars.  If you are a fresh coconut fan, these are definitely worth trying.

Baby coconuts are slight more pricey than more mature coconuts, but still only just over 2 dollars. If you are a fresh coconut fan, these are definitely worth trying.

I think it would work really well in shakes or a fruit salad. We just ate it plain, but the consistancy of the coconut meat is must softer (almost like jello), thinner.
