Recipe Friday: Salmon Patties

These little babies are easy to make, and great for lunches since they are good hot or cold (I like them cold, which has the added benefit of not making the lunch area at work smell like cooked salmon).
Recipe Friday: Salmon Patties
14-16oz cooked salmon (canned is ok to use, I've used it and it works quite well)
1 egg (large egg)
1/4 cup binding agent (this can be flour, breadcrumbs, panko-Japanese breadcrumbs...I used soy flour)
1 shallot chopped
Herbs and spices (dill, chives, parsley, fresh ground pepper-whatever you like with salmon)
Squirt of lemon juice
Mix all the ingredients together.

Form mixture into patties and pan fry. I use a bit of olive oil to keep them from sticking and to add a little flavor, and good fat, but you could use cooking spray or butter if you want.
Cook till brown on both sides and firm to the touch.
