I have decided, that you all have had enough suspense and that I've built up my special recipe enough.  Today, finally, I present to you....

"Uncle The Goog's All Purpose Seasoning"™

Recipe Friday with The Goog: Uncle The Goog's All Purpose Seasoning

When I say "All Purpose" I mean it.  I came up with this in an attempt to make my own chili powder and found myself using for everything.  I have added more ingredients since the first incarnation, but to be honest, this is only the second time I've made it.  It's still a bit of a work in progress, but it's got all my favorite spices, so I'm just playing around with how much of what.

To make this, you don't have to have a spice grinder/coffee grinder, you can use a blender but I prefer the grinder since it tends to give a finer grind.  Just be careful when you open which ever you use, if the powder hasn't settled you can quickly mace yourself...

and on that note, on to the ingredients:

1Tbl sp Whole Cumin
1Tbl sp Whole Coriander
1Tbl sp Whole Allspice
1Tbl sp Onion Flakes
1Tbl sp Crushed Red Pepper
1Tbl sp Dried Basel
1Tbl sp Paprica
1Tsp Curry
1Tsp Dried Parsley
1 Handful Thai Chili
2 Ancho Chilis
2 California Chilis
Add the whole cumin and coriander to a skillet and toast, watch it carefully because you don't want the seeds to burn.  Once they start to brown a bit, take them off the heat and put them aside to cool.

Grind all the whole spices into a fairly fine powder, it doesn't have to be regolith or anything but you know, make it a powder.  Move them into another container, then go ahead and grind anything else that's not already in powder form.

Take the dried chilis and cut off the tops and dump out the seeds (they can add some heat, but they're bitter, so I toss em).  Cut the chilis into strips, this is easier with some scissors. Then add the pieces to the grinder and well, I'm sure you can guess.  Grind em!

You can really use any dried chilis you have available, but the ones listed are the chilis I had in the cabinet.  Another note, the final mix isn't as hot as you'd think it is, at least it's not to me, but it does have some bite.

Add everything together and shake to mix.  Viola!  "Uncle The Goog's All Purpose Seasoning"!™

So there you have it!  It's pretty simple to make, if a bit messy.  I don't bother adding salt or black pepper to the mix because you should add those taste to the individual dish.  I add this to damn near anything and I, at least, love it.  I think Elise might get a bit tired of hearing me talk about it, but she has never complained about the taste.

I'd list some suggested uses, but it's all purpose andI don't have that kind of time.

Mix it with coarse salt and rim a glass with it. Add bloody mary. =)
