Recipe Friday: Reminder- Eat your Veggies (roasted)
So I don't really have a recipe today, more of a reminder. Roasted veggies are awesome, easy, healthy and filling.
Exhibit 1- Tray of roasted veggies containing: carrots, sweet potatoes, asparagus, butternut squash, parsnips and mushrooms! This along with some fish (more on that later) made a fantastic dinner, and lunch the next day.

Just put veggies on a tray, glug a little olive oil over them, sprinkle salt, and bake at 350 degrees till fork tender. Enjoy!
