Parsley Salad
I made this for Durian Day after reading about how much that fruit can give you "death breath". Parsley is a natural breath freshener and this salad was a big hit. It's was mainly cobbled together from stuff I had in my fridge.
1 bunch roughly chopped fresh parsley
1 shallot, thinly sliced or diced (optional)
2 teaspoons capers (and a bit of the caper juice is you can spare it).
1 1/2 tablespoons extra virgin olive oil
2 teaspoons fresh lemon juice
Salt to taste (I used Kosher salt)
For the dressing, whisk together olive oil, lemon, and a little bit of the caper juice.
Wash and rough chop the parsley, add shallots and capers.
Dress with dressing, toss and serve immediately.
